Citrus-Rum Glazed Salmon
Citrus-Rum Glaze
Ingredients:
2 teaspoons minced garlic
1 cup sweet chili sauce
2 cups orange marmalade
1 tablespoon blended oil
3 ounces Cruzan Black Strap Rum
Directions:
1. Sweat garlic in oil until soft. Add chili sauce and marmalade and simmer for 5 minutes.
2. Remove from heat, add rum and mix well.
3. Chill and set aside.
Salmon
Ingredients:
2 tablespoons blended oil
8-ounce piece of salmon
Salt and pepper
3 ounces citrus-rum glaze
Prepared rice (Rumfish uses yellow saffron rice)
Brussels sprouts (sauteed in butter with salt and pepper)
Lemon twist
Directions:
1. Heat oil in saute pan until just starting to smoke. Season salmon with salt and pepper and sear on both sides.
2. Remove from pan and place under broiler and cook until desired doneness.
3. Cover with glaze and place back under broiler to heat.
4. Serve with rice and Brussels sprouts. Top with lemon twist.
